I haven't been successful in booking a table at French Laundry--I never plan well enough (though it is on my to-do list for 2010). But I was able to eat a Per Se recently. It was an elegant meal and your post captures the essence of it. The salmon cornet was possibly one of my favorite things I was served. That and the sweet butter, which was so good that I won't be able to eat any other butter and enjoy it for a good while. Per Se isn't uptight, but it's indubitably New York. I wonder how French Laundry will be different. Thanks again for memorializing your experience.

Everything did look perfect and your photos and copy complemented the food nicely. I'm wondering though if you felt the place was too formal or fussy? It kind of seemed that way in the first few shots of the room and diners. But overall I'm sure it was a dream experience!

Christian, you are so delightfully capable of expressing the magic and delicacy of Thomas Keller's cooking. I went twice to French Laundry (dinner once, lunch once) a few years back and remain haunted by those perfect dining experiences. Now that I'm moving to NYC, a jaunt to Per Se is high on my list of must-do's and you've reminded me that I can't let that wait!
